Chicken Tortilla Soup (Busy Mom Friendly + Crockpot Option)

This is one of my favorite soups to make when I want something warm, filling, and easy to reheat throughout the week.

It makes a big batch, works great for leftovers, and is one of those meals that feels comforting without taking much effort.

I usually make this on the stovetop because it comes together quickly, but if crockpot works better for your day, that option works great too.

Ingredients (about 8 servings)

  • 6 cooked chicken breasts, diced

  • 1 can black beans, rinsed

  • 2 cups frozen corn

  • 1 can Rotel

  • 1 packet taco seasoning

  • 32 oz chicken broth

  • Squeeze lime juice

  • 1 cup low-fat shredded cheese

Optional toppings:

  • Greek yogurt

  • Tortilla strips

How I make it (stovetop)

  1. In a large Dutch oven or soup pot, add all ingredients except cheese

  2. Bring to a simmer and cook for 30–40 minutes

  3. Stir in shredded cheese until melted and combined

Crockpot option

If crockpot works better for your day:

  1. Add everything except cheese into crockpot

  2. Cook on:

    • LOW for 6–7 hours
      OR

    • HIGH for 3–4 hours

  3. Stir in cheese during the last 15 minutes before serving

How I make this work for weight loss

This soup is one of my favorites because it’s naturally filling and packed with protein.

What I usually do:

  • Use Greek yogurt instead of sour cream for topping

  • Go lighter on tortilla strips if I want to save points

  • Load up on extra broth and chicken so it feels hearty without extra calories

👉 This is one of those meals that keeps me full for a long time without feeling heavy.

  • Keep tortilla strips separate until ready to eat so they stay crunchy

  • Reheat soup first
