Sweet & Spicy Chicken Bowl (Busy Mom Friendly – 10 WW Points)

This is one of those meals that feels like takeout… but is simple enough to make at home on a busy night.

It has just enough spice, creamy sauce, and crunch to make it satisfying, while still fitting into Weight Watchers in a realistic way.

This is one I love when I want something flavorful that still feels balanced.

Ingredients (about 2 servings)

Base:

  • 1 cup cooked cauliflower rice

  • 1 cup cooked instant rice

Protein:

  • 1 cup RealGood lightly breaded chicken tenders

Sauce:

  • 2 tbsp light mayo

  • 2 tbsp sweet chili sauce

  • 2 tbsp yum yum sauce

Extras:

  • Package of steamed broccoli

Directions

  1. Cook both rice packages and mix together

  2. Add 1 cup rice mixture to each bowl

  3. Cook chicken according to package directions

  4. Mix mayo and sweet chili sauce together, then toss with cooked chicken and add to bowl

  5. Add steamed broccoli

  6. Drizzle with yum yum sauce on top

How I make this work for weight loss

This is one of those meals where a few simple swaps can lower the points depending on what fits your day.

What I usually do:

  • Mixing cauliflower rice with regular rice helps keep the points lower while still feeling satisfying

  • If I want to save points, I’ll skip the yum yum sauce

  • You could also use all cauliflower rice if you want a lower-point version

How I prep this for lunches

If I make this ahead for lunches:

  • Rice and broccoli go in one section of my container

  • Chicken goes in the other section

  • Yum yum sauce stays in a small 2 oz container until ready to eat

When I’m ready to eat:

  • Heat up the rice, broccoli, and chicken first

  • Add yum yum sauce after warming

👉 Keeping the sauce separate helps everything reheat better and keeps the texture right
