Sweet Island Chicken Bowl (Fresh, Flavorful, Busy Mom Friendly – 10 WW Points)
This is one of those meals that feels a little different from the usual weeknight dinner rotation — but is still simple enough for busy days.

Base:
½ cup cooked instant rice
Protein:
4 oz chicken tenderloins
Sauce:
3 tbsp teriyaki sauce
1 tbsp peanut sauce
Toppings:
1 can pineapple, drained
½ cup cabbage mix
¼ cup wonton strips
Directions
Cook instant rice and add to bowl
Air fry chicken tenderloins for 4 minutes
Glaze with teriyaki sauce, flip, and cook another 4 minutes
Slice chicken and add to bowl
Add pineapple, cabbage, and wonton strips
Mix teriyaki and peanut sauce together and drizzle on top

How I prep this for lunches
This recipe is written as a single serving, but if I’m making it for lunches during the week, I just double, triple, or scale it up depending on how many meals I want.
If I make this ahead:
Rice and chicken go in the main container
Pineapple and cabbage stay separate until after reheating
Wonton strips stay separate so they stay crunchy
Sauce goes in a small 2 oz container
When I’m ready to eat:
Heat the rice and chicken first
Add pineapple, cabbage, and sauce after warming
Add wonton strips last so they stay crisp
