Easy Loaded Burger Bowl (High Protein, Busy Mom Friendly – 9 WW Points)

This is one of those meals that feels like comfort food… but still works for weight loss.

It’s filling, easy to throw together, and something my whole family will actually eat — which is a win in itself.

This is one I come back to a lot, especially when I want something quick that keeps me full.

Ingredients (about 3 servings)

Base:

  • 1½ cups cooked mini hashbrowns (air fryer works great)

  • 1½ lb lean ground beef

  • 1 packet au jus seasoning

Toppings:

  • ½ cup shredded cheddar cheese

  • 3 tbsp bacon bits

  • ¾ cup caramelized onions

Sauce:

  • 3 tbsp chipotle sauce

  • 3 tbsp BBQ sauce

  • 3 tsp pickle juice

Directions

  1. Cook mini hashbrowns in the air fryer and add about ½ cup to each bowl

  2. Cook ground beef and mix in au jus seasoning (per packet instructions), then add ½ cup to each bowl

  3. Add 1/3 each of cheese, bacon bits, and onions

  4. Mix chipotle sauce, BBQ sauce, and pickle juice, then drizzle over the top

How I make this work for weight loss

This is one of those meals where I focus on balance, not perfection.

What I usually do:

  • Keep my portion of potatoes a little smaller

  • Don’t go overboard on the sauce

  • Make sure I’m getting a solid portion of protein

👉 It’s filling enough that I’m not snacking all night after

How I prep this for lunches

If I’m making this ahead for the week, I prep it a little differently so it reheats better.

  • I use a divided container

  • Potatoes go on one side

  • Meat goes on the other

  • I add the bacon and onions to the meat side

For the rest:

  • I keep the cheese and sauce in small 2 oz containers

When I’m ready to eat:

  • Heat up the potatoes and meat in the microwave, about 1 ½ minutes

  • Then add the cheese and sauce after
