My Sunday Lunch Meal Prep Routine (Busy Mom Version — Simple, Real Life)

If I don’t have lunch ready for the week…

I end up eating out.

A lot.

At one point, I was eating out almost every weekday — easily spending about $25 a day.

That’s $125 a week… just on lunch.

So this started as a weight loss habit.

But honestly?

👉 It’s also saved me a ton of money.

Why I do this

During the week:

  • I’m busy

  • I’m running around

  • I don’t have time to think about lunch

So if it’s not ready…

👉 I grab whatever is easiest
👉 and usually spend money doing it

This takes that decision off my plate.

What I actually do (simple version)

I keep this VERY simple.

Most weeks:
👉 I prep one meal (sometimes two)

That’s it.

I’ll make:

  • 3–5 servings

  • portion them out

  • and eat that throughout the week

What about leftovers?

Sometimes I don’t even start with meal prep.

If we have leftovers from the weekend:
👉 I’ll eat those first

Then transition into whatever I prepped.

My go-to lunch rotations

I keep this super simple and rotate meals I already know I like.

Here are some of the ones I make most often:

🍔 Easy Loaded Burger Bowl

All the burger flavors without the bun — super filling and easy.

🌮 Crunchy Walking Taco Bowl

Ground beef, toppings, and whatever I have on hand — always a go-to.

🍍 Sweet Island Chicken Bowl

A little sweeter, something different during the week so I don’t get bored.

🌶️ Sweet & Spicy Chicken Bowls

One of my favorites — easy, flavorful, and great for meal prep.

🍲 Chicken Tortilla Soup

Great for colder weeks or when I want something lighter but still filling.

🍳 Scramble Bake

Perfect for mixing it up — also works great for breakfast or lunch.

👉 I don’t make all of these every week — I just pick one (sometimes two) and stick with it.

How I prep it (real life version)

I don’t block off hours for this.

I usually:

  • have groceries delivered Saturday

  • prep on Sunday throughout the day

  • do it in between laundry, kids, and everything else

It’s not a perfect system — it just fits into my life.

What I use (makes this easier)

These are things I use every week — nothing overcomplicated, just what helps me stay consistent.

These have honestly made a big difference for me:

  • Glass meal prep containers → easy to portion, store, and reheat

  • Vegetable Chopper → saves so much time when I’m cutting things up

  • Air Fryer → I use this constantly for chicken, potatoes, and quick meals (mine is a simple one — nothing expensive, and it works great)

  • Mixing bowls → for throwing everything together quickly

How I store it

Everything goes into containers so it’s:

👉 grab-and-go during the week

No thinking. No decision-making.

What this changed for me

This has been one of the biggest game changers.

Because during the week:

  • I’m not relying on willpower

  • I’m not trying to figure something out

  • I’m not spending money on takeout

The decision is already made.

How this connects to my weight loss

This is one of the biggest reasons I’ve been able to stay consistent.

Not because I’m perfect…

But because I’ve made things easier on myself.

Real life note

Some weeks I prep everything.

Some weeks I don’t.

And that’s okay.

Even prepping just a few lunches makes a difference.
